Lemon Meringue Pie

Not that anyone will ever use this... but thought I would post it just the same.

Crust:
I usually buy the crust, because I stink at making it... but I know that Eva Lu can make a great pie crust. Regardless, bake at 375 degrees for 8-10 minutes.

Lemon Filling:
1 1/2 C. Sugar
1 1/2 C. Water
1/2 C. + 1 T Kingsford Cornstarch (9 TBS)

Stir until well mixed and blend it back with remaining mixture. Stir on medium heat until mixture boils for 1 minute. Stir in...
3 T. Butter
2 t. finely shredded lemon peel
1/2 C. lemon juice
Pour into pie shell

Meringue:
3 egg whites
1/4 t. cream of tartar
Beat on high speed, adding 6 T. sugar, 1 T. at a time. Beat until stiff and add
1 t. Vanilla
Spread over the pie and design into fancy peaks, bake at 300 degrees for about 3 or 4 minutes until the top is lightly brown.
