Dad's Red Beans and Rice

1 lb. dried red beans, cover in water and soak overnight.
Add 1/2 lb. pork, bacon, or ham and simmer. Cook covered for 15 minutes.
In a skillet, heat 1 TBS. of oil and saute an onion and a garlic clove.
Add to beans along with 2 TBS of parsley, 3/4 t. salt, and 1 1/2 t. Tabasco sauce.
Cover and simmer 1 1/2 - 1 3/4 hours or until beans are tender.
Serve over hot, cooked rice.
