Chocolate chocolate chip cookies

Ingredients

  • 2 1/4 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2 sticks butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs, beaten
  • 1 tablespoon vanilla
  • 1/2 cup unsweetened cocoa
  • 2 cups chocolate chips, 2 Hershey's chocolate bars, chopped or M&M'S
  • 1 cup chopped walnuts (optional)

Directions

Preheat oven to 375 degrees. In a bowl stir together flour, salt, and baking soda. In another large bowl stir together butter, both sugars, eggs, vanilla and cocoa. Gradually stir flour mixture into butter mixture and mix until combined. Stir chocolate chips and walnuts, if using, and stir to distribute evenly.
For cookies: Drop dough by tablespoonfuls onto greased baking sheets and bake about 10 minutes. Cool on a baking rack.

Raspberry Pretzel Desert

2 3 oz. packages raspberry jello
2 c. boiling water
16 oz. frozen raspberries
1 stick butter
3 T. sugar
2 1/2 cups crushed pretzels
1 8oz. package softened cream cheese
1 12 oz. cool whip
1 c sugar

mix 3 T sugar, melted butter, and pretzels together. Pat into a lightly greased 9x13 pan and bake for 10 min. at 350. LET COOL

Beat cream cheese, 1 cup sugar and cool whip until light and fluffy. spread over baked pretzels. Make sure you completely cover the pretzels to the edge of the pan. This will help keep the pretzels from getting soggy by the jello. LET COOL

Dissolve jello in 2 C boiling water, take off heat and immediately add frozen berries. let jell slightly. Spread on top of cream cheese mix.

Let chill in fridge! enjoy!!!!!!! =)

Best Beef Stew (America's Test Kitchen)

Serves 6 to 8
Use a good-quality, medium-bodied wine, such as Côtes du Rhône or Pinot Noir, for this stew. Try to find beef that is well marbled with white veins of fat. Meat that is too lean will come out slightly dry. Four pounds of blade steaks, trimmed of gristle and silver skin, can be substituted for the chuck-eye roast. While the blade steak will yield slightly thinner pieces after trimming, it should still be cut into 11/2-inch pieces. Look for salt pork that is roughly 75 percent lean. The stew can be cooled, covered tightly, and refrigerated for up to 2 days. Reheat it gently before serving.

Ingredients
  • 2 medium garlic cloves , minced or pressed through garlic press (about 2 teaspoons)
  • 4 anchovy fillets , finely minced (about 2 teaspoons)
  • 1 tablespoon tomato paste
  • 1 boneless beef chuck-eye roast (about 4 pounds), trimmed of excess fat, cut into 1 1/2-inch pieces (see note and step by step below)
  • 2 tablespoons vegetable oil
  • 1 large onion , halved and cut from pole to pole into 1/8-inch-thick slices (about 2 cups)
  • 4 medium carrots , peeled and cut into 1-inch pieces (about 2 cups)
  • 1/4 cup unbleached all-purpose flour
  • 2 cups red wine (see note)
  • 2 cups low-sodium chicken broth
  • 2 bay leaves
  • 4 sprigs fresh thyme
  • 4 ounces salt pork , rinsed of excess salt (see note)
  • 1 pound Yukon Gold potatoes , scrubbed and cut into 1-inch pieces
  • 1 1/2 cups frozen pearl onions , thawed
  • 2 teaspoons unflavored powdered gelatin (about 1 packet)
  • 1/2 cup water
  • 1 cup frozen peas , thawed
  •   Table salt and ground black pepper
Instructions
  • 1. Adjust oven rack to lower-middle position and heat oven to 300 degrees. Combine garlic and anchovies in small bowl; press with back of fork to form paste. Stir in tomato paste and set mixture aside.
  • 2. Pat meat dry with paper towels. Do not season. Heat 1 tablespoon vegetable oil in large heavy-bottomed Dutch oven over high heat until just starting to smoke. Add half of beef and cook until well browned on all sides, about 8 minutes total, reducing heat if oil begins to smoke or fond begins to burn. Transfer beef to large plate. Repeat with remaining beef and 1 tablespoon vegetable oil, leaving second batch of meat in pot after browning.
  • 3. Reduce heat to medium and return first batch of beef to pot. Add onion and carrots to Dutch oven and stir to combine with beef. Cook, scraping bottom of pan to loosen any browned bits, until onion is softened, 1 to 2 minutes. Add garlic mixture and cook, stirring constantly, until fragrant, about 30 seconds. Add flour and cook, stirring constantly, until no dry flour remains, about 30 seconds.
  • 4. Slowly add wine, scraping bottom of pan to loosen any browned bits. Increase heat to high and allow wine to simmer until thickened and slightly reduced, about 2 minutes. Stir in broth, bay leaves, thyme, and salt pork. Bring to simmer, cover, transfer to oven, and cook for 1 1/2 hours.
  • 5. Remove pot from oven; remove and discard bay leaves and salt pork. Stir in potatoes, cover, return to oven, and cook until potatoes are almost tender, about 45 minutes.
  • 6. Using large spoon, skim any excess fat from surface of stew. Stir in pearl onions; cook over medium heat until potatoes and onions are cooked through and meat offers little resistance when poked with fork (meat should not be falling apart), about 15 minutes. Meanwhile, sprinkle gelatin over water in small bowl and allow to soften for 5 minutes.
  • 7. Increase heat to high, stir in softened gelatin mixture and peas; simmer until gelatin is fully dissolved and stew is thickened, about 3 minutes. Season with salt and pepper to taste; serve.

Slow-Roasted Pork Shoulder with Peach Sauce (America's Test Kitchen)

Serves 8 to 12
We prefer natural to enhanced pork (pork that has been injected with a salt solution to increase moistness and flavor), though both will work in this recipe. Add more water to the roasting pan as necessary during the last hours of cooking to prevent the fond from burning. Serve the pork with the accompanying peach sauce or cherry sauce (related recipe) or with a sweet-tart chutney.

Ingredients
Pork Roast
  • 1 bone-in pork butt , 6 to 8 pounds (see note)
  • 1/3 cup kosher salt
  • 1/3 cup packed light brown sugar
  •   Ground black pepper
Peach Sauce
  • 10 ounces frozen peaches , cut into 1-inch chunks (about 2 cups) or 2 fresh peaches, cut into 1/2-inch wedges
  • 2 cups dry white wine
  • 1/2 cup granulated sugar
  • 1/4 cup plus 1 tablespoon unseasoned rice vinegar
  • 2 sprigs fresh thyme
  • 1 tablespoon whole-grain mustard
Instructions
  • 1. FOR THE ROAST: Using sharp knife, cut slits 1 inch apart in crosshatch pattern in fat cap of roast, being careful not to cut into meat. Combine salt and brown sugar in medium bowl. Rub salt mixture over entire pork shoulder and into slits. Wrap roast tightly in double layer of plastic wrap, place on rimmed baking sheet, and refrigerate at least 12 and up to 24 hours.
  • 2. Adjust oven rack to lowest position and heat oven to 325 degrees. Unwrap roast and brush off any excess salt mixture from surface. Season roast with pepper. Transfer roast to V-rack coated with nonstick cooking spray set in large roasting pan and add 1 quart water to roasting pan.
  • 3. Cook roast, basting twice during cooking, until meat is extremely tender and instant-read thermometer inserted into roast near but not touching bone registers 190 degrees, 5 to 6 hours. Transfer roast to carving board and let rest, loosely tented with foil, 1 hour. Transfer liquid in roasting pan to fat separator and let stand 5 minutes. Pour off ¼ cup jus; discard fat and reserve remaining jus for another use.
  • 4. FOR THE SAUCE: Bring peaches, wine, granulated sugar, ¼ cup vinegar, ¼ cup defatted jus, and thyme to simmer in small saucepan; cook, stirring occasionally, until reduced to 2 cups, about 30 minutes. Stir in remaining tablespoon vinegar and mustard. Remove thyme, cover, and keep warm.
  • 5. Using sharp paring knife, cut around inverted T-shaped bone until it can be pulled free from roast (use clean kitchen towel to grasp bone). Using serrated knife, slice roast. Serve, passing sauce separately.

Memphis-Style Barbecued Spareribs on a Charcoal Grill (America's Test Kitchen)

Serves 4 to 6
Don’t remove the membrane that runs along the bone side of the ribs; it prevents some of the fat from rendering out, leading to more tender results. Pouring lit briquettes over unlit briquettes provides the low, steady heat necessary for effective smoking. To maintain a constant temperature, manipulate the upper and lower vents of your grill and do not remove the lid any more often than necessary. For less spiciness, reduce the cayenne to 1/2 teaspoon.

Rub
  • 2 tablespoons sweet paprika
  • 2 tablespoons light brown sugar
  • 1 tablespoon table salt
  • 2 teaspoons chili powder
  • 1 1/2 teaspoons ground black pepper
  • 1 1/2 teaspoons garlic powder
  • 1 1/2 teaspoons onion powder
  • 1 1/2 teaspoons cayenne pepper (see note)
  • 1/2 teaspoon dried thyme
Ribs
  • 2 racks St. Louis-style spareribs , 2 1/2 to 3 pounds each (see note)
  • 1/2 cup apple juice
  • 3 tablespoons apple cider vinegar
  •   Large disposable aluminum roasting pan
  • 1/2 cup wood chips , soaked
Instructions
  • 1. Combine rub ingredients in small bowl. Place racks on rimmed baking sheet; sprinkle rub on both sides of each rack, rubbing and pressing to adhere. Set racks aside while preparing grill.
  • 2. Combine apple juice and vinegar in small bowl; set aside. Open top and bottom grill vents halfway and arrange 15 unlit charcoal briquettes evenly on 1 side of grill. Place disposable pan filled with 1 inch water on other side of grill. Light large chimney starter filled one-third with charcoal (about 33 briquettes) and allow to burn until coals are half coated with thin layer of ash, about 15 minutes. Empty coals into grill on top of unlit briquettes to cover half of grill. Sprinkle soaked wood chips over coals. Position cooking grate over coals, cover grill, and heat grate until hot, about 5 minutes; scrape grate clean with grill brush.
  • 3. Place ribs, meat side down, on grate over water pan. Cover grill, positioning top vent over ribs to draw smoke through grill. Cook ribs 45 minutes, adjusting vents to keep temperature inside grill around 250 to 275 degrees. Flip ribs meat side up, turn 180 degrees, and switch their positions so that rack that was nearer fire is on outside. Brush each rack with 2 tablespoons apple juice mixture; cover grill and cook another 45 minutes. About 30 minutes before removing ribs from grill, adjust oven rack to middle position and heat oven to 300 degrees.
  • 4. Transfer ribs, meat side up, to wire rack set in rimmed baking sheet. Brush top of each rib with 2 tablespoons apple juice mixture. Pour 1½ cups water into bottom of baking sheet; roast 1 hour. Brush ribs with remaining apple juice mixture and continue to roast until meat is tender but not falling off bone (internal temperature should be 195 to 200 degrees), 1 to 2 hours. Transfer ribs to cutting board, tent loosely with foil, and let rest 15 minutes. Cut ribs between bones to separate and serve.

Rosemary Focaccia (America's Test Kitchen)

Makes two 9-inch round loaves
If you don’t have a baking stone, bake the bread on an overturned, preheated rimmed baking sheet set on the upper-middle oven rack. The bread can be kept for up to 2 days well wrapped at room temperature or frozen for 2 months wrapped in foil and placed in a zipper-lock bag.

Ingredients
Biga
  • 1/2 cup (2 1/2 ounces) unbleached all-purpose flour
  • 1/3 cup (2 2/3 ounces) warm water (100-110 degrees F)
  • 1/4 teaspoon instant or rapid-rise yeast
Dough
  • 2 1/2 cups (12 1/2 ounces) unbleached all-purpose flour , plus extra for shaping
  • 1 1/4 cups (10 ounces) warm water (100-110 degrees F)
  • 1 teaspoon instant or rapid-rise yeast
  •   Kosher salt
  • 4 tablespoons extra-virgin olive oil
  • 2 tablespoons chopped fresh rosemary
Instructions
  • 1. FOR THE BIGA: Combine flour, water, and yeast in large bowl and stir with wooden spoon until uniform mass forms and no dry flour remains, about 1 minute. Cover bowl tightly with plastic wrap and let stand at room temperature (about 70 degrees) overnight (at least 8 hours and up to 24 hours.) Use immediately or store in refrigerator for up to 3 days (allow to stand at room temperature 30 minutes before proceeding with recipe.)
  • 2. FOR THE DOUGH: Stir flour, water, and yeast into biga with wooden spoon until uniform mass forms and no dry flour remains, about 1 minute. Cover with plastic wrap and let rise at room temperature for 15 minutes.
  • 3. Sprinkle 2 teaspoons salt over dough; stir into dough until thoroughly incorporated, about 1 minute. Cover with plastic wrap and let rise at room temperature 30 minutes. Spray rubber spatula or bowl scraper with nonstick cooking spray; fold partially risen dough over itself by gently lifting and folding edge of dough toward middle. Turn bowl 90 degrees; fold again. Turn bowl and fold dough 6 more times (total of 8 turns). Cover with plastic wrap and let rise for 30 minutes. Repeat folding, turning, and rising 2 more times, for total of three 30-minute rises. Meanwhile, adjust oven rack to upper-middle position, place baking stone on rack, and heat oven to 500 degrees at least 30 minutes before baking.
  • 4. Gently transfer dough to lightly floured counter. Lightly dust top of dough with flour and divide in half. Shape each piece of dough into 5-inch round by gently tucking under edges. Coat two 9-inch round cake pans with 2 tablespoons olive oil each. Sprinkle each pan with ½ teaspoon kosher salt. Place round of dough in pan, top side down; slide dough around pan to coat bottom and sides, then flip over. Repeat with second piece of dough. Cover pans with plastic wrap and let rest for 5 minutes.
  • 5. Using fingertips, press dough out toward edges of pan. (If dough resists stretching, let it relax for 5 to 10 minutes before trying again.) Using dinner fork, poke surface of dough 25 to 30 times, popping any large bubbles. Sprinkle rosemary evenly over top of dough. Let dough rest until slightly bubbly, 5 to 10 minutes.
  • 6. Place pans on baking stone and reduce oven temperature to 450 degrees. Bake until tops are golden brown, 25 to 28 minutes, switching placement of pans halfway through baking. Transfer pans to wire rack and let cool 5 minutes. Remove loaves from pan and return to wire rack. Brush tops with any oil remaining in pan. Let cool 30 minutes before serving.

Horseradish-Crusted Beef Tenderloin (America's Test Kitchen)

Serves 6
If using table salt, reduce the amount in step 1 to 1 1/2 teaspoons. Add the gelatin to the horseradish paste at the last moment, or the mixture will become unspreadable. If desired, serve the roast with Horseradish Cream Sauce (recipe follows; you will need 2 jars of prepared horseradish for both the roast and sauce). If you choose to salt the tenderloin in advance, remove it from the refrigerator 1 hour before cooking. To make this recipe 1 day in advance, prepare it through step 3, but in step 2 do not toss the bread crumbs with the other ingredients until you are ready to sear the meat.

Ingredients
  • 1 beef tenderloin center-cut Châteaubriand (about 2 pounds), trimmed of fat and silver skin
  •   Kosher salt (see note)
  • 3 tablespoons panko bread crumbs
  • 1 cup plus 2 teaspoons vegetable oil
  • 1 1/4 teaspoons ground black pepper
  • 1 small shallot , minced (about 1 1/2 tablespoons)
  • 2 medium cloves garlic , minced or pressed through garlic press (about 2 teaspoons)
  • 1/4 cup well-drained prepared horseradish (see note)
  • 2 tablespoons minced fresh parsley leaves
  • 1/2 teaspoon minced fresh thyme leaves
  • 1 small russet potato (about 6 ounces), peeled and grated on large holes of box grater
  • 1 1/2 teaspoons mayonnaise
  • 1 1/2 teaspoons Dijon mustard
  • 1/2 teaspoon powdered gelatin (see note)
Instructions
  • 1. Sprinkle roast with 1 tablespoon salt, cover with plastic wrap, and let stand at room temperature 1 hour or refrigerate for up to 24 hours. Adjust oven rack to middle position and heat oven to 400 degrees.
  • 2. Toss bread crumbs with 2 teaspoons oil, 1/4 teaspoon salt, and 1/4 teaspoon pepper in 10-inch nonstick skillet. Cook over medium heat, stirring frequently, until deep golden brown, 3 to 5 minutes. Transfer to rimmed baking sheet and cool to room temperature (wipe out skillet). Once cool, toss bread crumbs with shallot, garlic, 2 tablespoons horseradish, parsley, and thyme.
  • 3. Rinse grated potato under cold water, then squeeze dry in kitchen towel. Transfer potatoes and remaining cup oil to 10-inch nonstick skillet. Cook over high heat, stirring frequently, until potatoes are golden brown and crisp, 6 to 8 minutes. Using slotted spoon, transfer potatoes to paper towel-lined plate and season lightly with salt; let cool for 5 minutes. Reserve 1 tablespoon oil from skillet and discard remainder. Once potatoes are cool, transfer to quart-size zipper-lock bag and crush until coarsely ground. Transfer potatoes to baking sheet with bread-crumb mixture and toss to combine.
  • 4. Pat exterior of tenderloin dry with paper towels and sprinkle evenly with remaining teaspoon pepper. Heat reserved tablespoon oil in 12-inch nonstick skillet over medium-high heat until just smoking. Sear tenderloin until well browned on all sides, 5 to 7 minutes. Transfer to wire rack set in rimmed baking sheet and let rest 10 minutes.
  • 5. Combine remaining 2 tablespoons horseradish, mayonnaise, and mustard in small bowl. Just before coating tenderloin, add gelatin and stir to combine. Spread horseradish paste on top and sides of meat, leaving bottom and ends bare. Roll coated sides of tenderloin in bread-crumb mixture, pressing gently so crumbs adhere in even layer that just covers horseradish paste; pat off any excess.
  • 6. Return tenderloin to wire rack. Roast until instant-read thermometer inserted into center of roast registers 120 to 125 degrees for medium-rare, 25 to 30 minutes.
  • 7. Transfer roast to carving board and let rest 20 minutes. Carefully cut meat crosswise into 1/2-inch-thick slices and serve.
Technique
  • Science Experiment
    A simple egg wash is the usual choice for binding a bread-crumb coating to meat, but it didn't work for our slippery horseradish-bread-crumb mixture. Could we do better by replacing the egg white with gelatin?
    THE EXPERIMENT
    We prepared two pastes, one made with egg white, horseradish, mayonnaise, and mustard and a second where we substituted 1/2 teaspoon of gelatin for the egg white. We applied each paste to a beef tenderloin and then cooked the roasts according to our recipe.
    THE RESULTS
    The gelatin paste kept the bread crumbs attached to meat much better than the egg version. It also had a slight elasticity and allowed it to remain firmly stuck to the meat as we sliced.
    THE EXPLANATION
    Meat and gelatin have a natural affinity. Both are made up of linear proteins that are able to form tight bonds with each other. The proteins in egg whites, on the other hand, are globular (wound up like balls of yarn). Although egg whites do eventually stretch into more linear shapes when heated, they still form a weaker bond with meat than gelatin.

Horseradish Cream Sauce

Makes about 1 Cup
Ingredients
  • 1/2 cup heavy cream
  • 1/2 cup prepared horseradish
  • 1 teaspoon table salt
  • 1/8 teaspoon pepper, black, ground
Instructions
  • Whisk cream in medium bowl until thickened but not yet holding soft peaks, 1 to 2 minutes. Gently fold in horseradish, salt, and pepper. Transfer to serving bowl and refrigerate at least 30 minutes or up to 1 hour before serving.

Banana Bread (America's Test Kitchen)

Makes one 9-inch loaf
Be sure to use very ripe, heavily speckled (or even black) bananas in this recipe. This recipe can be made using 5 thawed frozen bananas; since they release a lot of liquid naturally, they can bypass the microwaving in step 2 and go directly into the fine-mesh strainer. Do not use a thawed frozen banana in step 4; it will be too soft to slice. Instead, simply sprinkle the top of the loaf with sugar. The test kitchen’s preferred loaf pan measures 8½ by 4½ inches; if you use a 9 by 5-inch loaf pan, start checking for doneness five minutes earlier than advised in the recipe. The texture is best when the loaf is eaten fresh, but it can be stored (cool completely first), covered tightly with plastic wrap, for up to 3 days.

Ingredients
  • 1 3/4 cups (8 3/4 ounces) unbleached all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon table salt
  • 6 large very ripe bananas (about 2 1/4 pounds), peeled (see note)
  • 8 tablespoons (1 stick) unsalted butter , melted and cooled slightly
  • 2 large eggs
  • 3/4 cup (5 1/4 ounces) packed light brown sugar  (*I would add an extra 1/2 granulated sugar)
  • 1 teaspoon vanilla extract
  • 1/2 cup walnuts , toasted and coarsely chopped (optional)
  • 2 teaspoons granulated sugar
Instructions
  • 1. Adjust oven rack to middle position and heat oven to 350 degrees. Spray 8½ by 4½-inch loaf pan with nonstick cooking spray. Whisk flour, baking soda, and salt together in large bowl.
  • 2. Place 5 bananas in microwave-safe bowl; cover with plastic wrap and cut several steam vents in plastic with paring knife. Microwave on high power until bananas are soft and have released liquid, about 5 minutes. Transfer bananas to fine-mesh strainer placed over medium bowl and allow to drain, stirring occasionally, 15 minutes (you should have ½ to ¾ cup liquid).
  • 3. Transfer liquid to medium saucepan and cook over medium-high heat until reduced to ¼ cup, about 5 minutes. Remove pan from heat, stir reduced liquid into bananas, and mash with potato masher until fairly smooth. Whisk in butter, eggs, brown sugar, and vanilla.
  • 4. Pour banana mixture into flour mixture and stir until just combined with some streaks of flour remaining. Gently fold in walnuts, if using. Scrape batter into prepared pan. Slice remaining banana diagonally into ¼-inch-thick slices. Shingle banana slices on top of either side of loaf, leaving 1½-inch-wide space down center to ensure even rise. Sprinkle granulated sugar evenly over loaf.
  • 5. Bake until toothpick inserted in center of loaf comes out clean, 55 to 75 minutes. Cool bread in pan on wire rack 15 minutes, then remove loaf from pan and continue to cool on wire rack. Serve warm or at room temperature.

Minestrone (America's Test Kitchen)

Serves 6 to 8
If you are pressed for time you can “quick-brine” your beans. In step 1, combine the salt, water, and beans in a large Dutch oven and bring to a boil over high heat. Remove the pot from the heat, cover, and let stand 1 hour. Drain and rinse the beans and proceed with the recipe. We prefer cannellini beans, but navy or great Northern beans can be used. We prefer pancetta, but bacon can be used. To make this soup vegetarian, substitute vegetable broth for chicken broth and 2 teaspoons of olive oil for the pancetta. Parmesan rind is added for flavor, but can be replaced with a 2-inch chunk of the cheese. In order for the starch from the beans to thicken the soup, it is important to maintain a vigorous simmer in step 3. The soup can be cooled, covered tightly, and refrigerated for up to 2 days. Reheat it gently and add basil just before serving.

  • 3 ounces pancetta , cut into 1/4-inch pieces (see note)
  • 2 medium celery ribs , cut into 1/2-inch pieces (about 3/4 cup)
  • 1 medium carrot , peeled and cut into 1/2-inch pieces (about 3/4 cup)
  • 2 small onions , peeled and cut into 1/2-inch pieces (about 1 1/2 cups)
  • 1 medium zucchini , trimmed and cut into 1/2-inch pieces (about 1 cup)
  • 2 medium garlic cloves , minced or pressed through garlic press (about 2 teaspoons)
  • 1/2 small head green cabbage , halved, cored, and cut into 1/2-inch pieces (about 2 cups) (see step by step below)
  • 1/8 - 1/4 teaspoon red pepper flakes
  • 8 cups water
  • 2 cups low-sodium chicken broth
  • 1 piece Parmesan cheese rind , about 5 by 2 inches (see note)

  • 1. Dissolve 1 1/2 tablespoons salt in 2 quarts cold water in large bowl or container. Add beans and soak at room temperature for at least 8 hours and up to 24 hours. Drain and rinse well.
  • 2. Heat oil and pancetta in large Dutch oven over medium-high heat. Cook, stirring occasionally, until pancetta is lightly browned and fat has rendered, 3 to 5 minutes. Add celery, carrot, onions, and zucchini; cook, stirring frequently, until vegetables are softened and lightly browned, 5 to 9 minutes. Stir in garlic, cabbage, 1/2 teaspoon salt, and red pepper flakes; continue to cook until cabbage starts to wilt, 1 to 2 minutes longer. Transfer vegetables to rimmed baking sheet and set aside.
  • 3. Add soaked beans, water, broth, Parmesan rind, and bay leaf to now-empty Dutch oven and bring to boil over high heat. Reduce heat and vigorously simmer, stirring occasionally, until beans are fully tender and liquid begins to thicken, 45 to 60 minutes.
  • 4. Add reserved vegetables and V8 juice to pot; cook until vegetables are soft, about 15 minutes. Discard bay leaf and Parmesan rind, stir in chopped basil, and season with salt and pepper. Serve with olive oil and grated Parmesan.
