Fairly easy lasagna. I got the recipe from Verna Peterson... though it never tastes as good as hers when I make it, it still turns out quite well.
1/2 lb ground beef
3/4 C water
2 15oz cans of spaghetti sauce
1 tsp salt
Lasagna noodles (about 8 oz)
1 C small curd cottage cheese
12 oz mozzarella or monetary jack cheese
1/4 C Parmesan cheese
Cook beef and drain. Add water, sauce and salt and bring to a boil. Layer sauce, noodles and cheese. Bake at 375 degrees for 60 minutes and garnish with Parmesan cheese.

Suzie's Great Zuchini Bread
For this you will need three mixing bowls. I know it dirties more dishes, but it's worth it.
In mixing bowl # 1, combine:
4 large eggs
1 cup oil
2 1/2 C sugar
2 1/2 t vanilla
In mixing bowl #2, combine:
3 1/2 C flour
1 T cinnamon
a dash of nutmeg
1 t salt
1 t baking powder
1 t baking soda
In mixing bowl #3, combine:
4 C largely shredded zucchini
2/3 C sour cream
1 C pecans or walnuts (if you so choose)
Slowly mix bowl #1 and #2, and then add that to bowl #3.
Put into loaf pans that have been greased and lightly coated with a sugar/flour mixture. Fill about halfway and bake at 350 degrees for 60-70 minutes.

Adjust the heat to maintain an active but gentle boil, and cook for 5 minutes, stirring often. When frosting begins to thicken, remove from heat, stir in the vanilla, and set aside to cool for about 20 minutes.
Beat frosting until it is shiny and frost the cake.

Garlic Breadsticks

1 1/2 C warm water
2 T sugar
1/2 t salt
3 + C flour
Dissolve yeast in warm water. Add the rest of the ingredients, adding flour until dough is slightly sticky. Let rise and melt 1/4 C butter on a cookie sheet or cake pan. Press dough into the bottom of the pan, sprinkle with garlic salt and Parmesan cheese, and cut into breadsticks with pizza cutter. Let rise for a little while longer and bake at 375 degrees for about 10-12 minutes.

Choose the best potatoes available. Place unpeeled potatoes in cool water, add salt and bring to a boil. Boil gently until potatoes are done, drain water and allow them to remain in the warm pan just until cool enough to handle. If you let them get cold, your salad will not be as good. DO NOT use refrigerated potatoes.
While potatoes are cooling, dice a large, mild onion, pickles (bread a butter pickles work the best), and a few hard boiled eggs (use about 5 for a medium size salad).
As soon as you can handle the potatoes, quickly peel and dice them into your mixing bowl and immediately stir in Miracle Whip.
Mix in onions, pickles, and eggs. Add more salad dressing or a little pickle juice and salt to taste. Best if eaten warm.

3. Dip in 50/50 mixture of milk and lightly beaten egg.
4. Dip in bread crumbs. Note: add salt, pepper, garlic powder, and sweet basil to the flour, egg/milk mixture, and to the bread crumbs.
5. Using olive oil, pan fry until golden brown on both sides.
6. Put a layer of favorite prepared spaghetti sauce on bottom of baking dish.
7. Lay a layer of fried chicken pieces in pan.
8. Cover with a thin layer of shredded mozzarella cheese.
9. Cover with a layer of spaghetti sauce.
10. Repeat with as many layers as your pan will hold, finishing with spaghetti sauce.
11. Add a thin layer of Parmesan cheese.
12. Bake at 350 degrees until heated through and cheese is melted.

3 cups grated raw sweet potatoes
Cream butter and sugars in large mixing bowl. Blend in eggs. Add flour, baking powder, cinnamon, nutmeg, and salt. Fold in grated sweet potatoes. Pour into a well greased 8 inch black iron skillet. Bake in a preheated 350-degree oven 1 hour or until tester comes out clean.

Add to beans along with 2 TBS of parsley, 3/4 t. salt, and 1 1/2 t. Tabasco sauce.
Cover and simmer 1 1/2 - 1 3/4 hours or until beans are tender.
Serve over hot, cooked rice.

Eggnog Cookies

| Cream sugar, butter eggnog, and vanilla until smooth. Set aside. Combine flour, baking powder, cinnamon, and nutmeg. Add two mixtures together beating at a slow speed, do not over mix. Drop by rounded teaspoon onto greased cookie sheet and sprinkle with nutmeg. Bake at 300 F for 20 to 25 minutes. Makes about 3 dozen small cookies. |

Hot Rolls:
· 2 T. yeast dissolved in 1/2 warm water
· Combine the following & cool to luke warm
2 C. scalded milk (or 1 C. canned milk + 1 C. very hot water)
1/4 C. margarine
1/2 C. sugar
2 t. salt
· 7 cups flour
· 2 beaten eggs
Add 3 cups flour to luke warm mixture & beat well. Beat in yeast and eggs. Gradually add remaining flour to form soft dough.

| Prepare sourdough as usual. Be sure to save out your start and return it to its container. Mix together sourdough, milk, eggs, and sugar. Stir in the corn, onions, cheese, green chilis, and cornmeal until smooth. Add the baking soda to the melted butter and stir this into the batter. Preheat a 10" skillet or dutch over to about 400 F. and pour the batter into it. Bake at 400 F. for 20-25 minutes or until golden brown. |

| 1 cup thick sourdough | ||

| Mix: allow to ferment for 2-3 hours until it is light and bubbly. | ||

| 4 squares baking chocolate, or 1/3 cup cocoa | ||
| 1/2 tsp of salt | ||
| 1/2 cup margarine | ||

| 3/4 tsp soda | ||
| Blend the sugar and margarine together with a pastry blender. Add cocoa or melt the chocolate and add to the above mixture. Add eggs, vanilla, salt, and soda. Mix thoroughly with the sugar, margarine, and chocolate mixture. Blend this mixture with the sourdough. Pour batter into a large greased cake pan. Bake at 400 F. for 25-30 min. or until done. The topping I like best is whipped cream with cocoa and sugar added. If your cake falls, call it Brownies. |
